These cookies are amazing! The rich almond flavor with the sweet strawberry rhubarb spread is a combination you won't be able to limit to just one or two. I used the back of a measuring spoon to make the indent then filled using the same spoon so that the indent was even and perfectly filled. Would highly recommend this recipe.

I made these according to the recipe and they tasted great, but on my second batch, I baked them on parchment paper and only cooked them for 12 minutes. My first batch was burnt on the bottoms, so this definitely helped them to be done to perfection! They were a HUGE hit!
