Beef & Blue Cheese Pasta

  • Beef Blue Cheese Pasta

Ingredients

  • 12 ounces penne pasta
  • 1½ cups half & half
  • ½ cup grated Parmesan cheese
  • 1 packet Artichoke & Spinach Warm Dip Mix
  • 2 tablespoons vegetable oil
  • 3 cups fresh baby spinach leaves, chopped
  • 2½ cups prepared and shredded Creating Magic Slow Cooked Beef, thawed if frozen
  • 1 tablespoon Rustic Herb Seasoning
  • 1 large tomato, chopped
  • ⅓ cup crumbled blue cheese

Directions

  1. Prepare pasta according to package directions; drain. In medium bowl, whisk together half & half, Parmesan and Artichoke & Spinach Warm Dip Mix; set aside.
  2. In large skillet, heat oil over medium-high heat. Add spinach, beef and Rustic Herb Seasoning. Sauté 3-4 minutes. Stir in half & half mixture and pasta.
  3. Reduce heat and simmer 2-3 minutes, stirring frequently or until desired thickness of sauce. Remove from heat and stir in tomatoes and blue cheese.
  • Makes 6 servings.
  • Serve with a green salad and Creamy Onion & Garlic Dressing.
  • Make Ahead & Freeze: Prepare pasta, rinse with cold water and toss with 1 tablespoon oil. Place in a gallon freezer bag. Place Creating Magic Slow Cooked Beef and Rustic Herb Seasoning in a quart freezer bag. Place both bags and Artichoke & Spinach Warm Dip Mix packet in a gallon freezer bag. Seal well, label and freeze. Thaw completely. Continue with step 1.

    Great Recipe

    Good dinner, great flavor. The only change I made was using feta cheese rather than blue cheese due to family’s preference.
