Ingredients
- 12 ounces penne pasta
- 1½ cups half & half
- ½ cup grated Parmesan cheese
- 1 packet Artichoke & Spinach Warm Dip Mix
- 2 tablespoons vegetable oil
- 3 cups fresh baby spinach leaves, chopped
- 2½ cups prepared and shredded Creating Magic Slow Cooked Beef, thawed if frozen
- 1 tablespoon Rustic Herb Seasoning
- 1 large tomato, chopped
- ⅓ cup crumbled blue cheese
Directions
- Prepare pasta according to package directions; drain. In medium bowl, whisk together half & half, Parmesan and Artichoke & Spinach Warm Dip Mix; set aside.
- In large skillet, heat oil over medium-high heat. Add spinach, beef and Rustic Herb Seasoning. Sauté 3-4 minutes. Stir in half & half mixture and pasta.
- Reduce heat and simmer 2-3 minutes, stirring frequently or until desired thickness of sauce. Remove from heat and stir in tomatoes and blue cheese.
- Makes 6 servings.
- Serve with a green salad and Creamy Onion & Garlic Dressing.
- Make Ahead & Freeze: Prepare pasta, rinse with cold water and toss with 1 tablespoon oil. Place in a gallon freezer bag. Place Creating Magic Slow Cooked Beef and Rustic Herb Seasoning in a quart freezer bag. Place both bags and Artichoke & Spinach Warm Dip Mix packet in a gallon freezer bag. Seal well, label and freeze. Thaw completely. Continue with step 1.
