Ingredients
- Parchment paper
- 4 cups shredded zucchini, (about 3 medium or 4 small zucchini)
- 3 cups shredded mozzarella cheese, divided
- ½ cup grated Parmesan cheese
- ¼ cup cornstarch
- 2 large eggs, beaten
- 3⅓ tablespoons Mama Mia™ Marinara Sauce Mix, divided
- 1 teaspoon Garlic Garlic™ Seasoning
- 1 (15 ounce) can crushed tomatoes
Directions
- Preheat oven to 425°F. Line a large (17x11-inch) rimmed baking sheet with parchment paper. Place shredded zucchini in cheesecloth or a clean kitchen cloth; squeeze out excess liquid.
- In large mixing bowl, combine dried zucchini, 1 cup mozzarella cheese, Parmesan cheese, cornstarch, beaten eggs, 1 teaspoon Mama Mia Marinara Sauce Mix and Garlic Garlic Seasoning. Mix until well combined.
- Transfer zucchini mixture to parchment lined baking sheet. Press into a 15x10-inch rectangle. Bake 25-30 minutes or until golden brown. Meanwhile, in small bowl, combine crushed tomatoes with 2 tablespoons Mama Mia Marinara Sauce Mix; set aside.
- Sprinkle remaining 2 cups mozzarella cheese and remaining 1 tablespoon Mama Mia Marinara Sauce Mix over browned zucchini crust. Continue baking 10 minutes. Cut cheesy "bread" into strips and serve with marinara sauce.
- Makes 8 servings.
- Tip: Reheat leftovers in a preheated 425°F oven 5-10 minutes. (Reheating in microwave will result in soggy "bread" sticks).
- Serving Suggestion: For a great pizza crust, prepare through step 3. Spread with desired amount of marinara sauce, top with your favorite pizza toppings and desired amount of remaining mozzarella cheese. Bake 10-12 minutes or until desired doneness.
