I made this as a crustless quiche, and we all loved it! I served it with breakfast potatos and fruit...perfect for the weeknight. Since there's not much seasoning in the recipe, using rotisserie chicken or well seasoned chicken that you roast at home is a must. I'd definitely add some additional salt and pepper as well as another tabelspoon of the Dried Tomato & Garlic Pesto Mix to the egg mixture next time I make it. Good stuff!
