Chicken Enchilada Soup

This is a perfect recipe to prep ahead and freeze! It’s a huge family favorite!

I made this with Turkey instead of chicken it was so good my husband had 3 bowls!!! Yummy and so simple. I work night shift so I threw it it the crockpot in the morning and when it was supper time it was all done

This recipe is a keeper! Easy, delicious & even better left over the next day for lunch. However, after a friend made it first & thought it to be somewhat bland, I made it using my Creating Magic batch chicken from the freezer (thawed) & substituted one can of the tomatoes with Rotel. Hold the OO & GG & season to taste. Since the chicken already cooked, I added it to the crockpot about 1.5 hours before dinner.

Absolutely delicious! Put this in the slow cooker the morning of Oct 31st...it was so nice to come home to a nice, hearty bowl of soup. Didn't have to worry about making dinner before the kids went out with their costumes! Will be making this again very soon!
