A big hit!

Made this for Easter dinner and we loved it! So easy to make too. I've been told I have to make it for all family gatherings this Spring and Summer.

Delicious, light meal!

I made this recipe for the first time last night and will definitely be adding it to our rotation. It was super easy and delicious. The creamy goat cheese was a nice addition to dish. Also, since it's served cold with just the grilled shrimp on top, it would easy to make ahead of time.

Get to Eat Heaven

This is what my 10 year old said as she peered into the bowl of goodness! The smell of shrimp, kick of sisi cilantro, fresh lime and goat cheese. It really is delicious!
