Mama Mia Italian Meatloaf

I first made this as it was in a freezer meal workshop I did. Not something I would normally try. It's probably the favorite thing I've made from TS. We love it. It's always moist. I forgot to add the spinach the last time I made it and it's still good. We just ate the spinach on the side as a salad!

The whole family loved this and one kiddo even asked for the leftovers in a sandwich for breakfast the next day. It's easy to mix up and have the basic loaf in the freezer ready to go for a busy day - and I have used ground turkey and ground turkey sausage in place of the beef and pork with no complaints. This is a go to any time we have extra spinach.

Made this for the first time the last night. The entire family raved about it. My son (picky eater, small appetite) had 2 helpings and had the left overs for breakfast this morning!! I love that this has veggies in it so I know my kids are getting a great (and delicious) meal. This will become the staple meatloaf at our house.

I tend to forget about meatloaf, but always enjoy it when I do remember it. This is a great recipe.

The flavors in this are amazing! I thought prep time would take much longer than it did, so I was happy about that. I didn't need to add any salt and it wasn't dry, at all. The fact that there's spinach in this and you can't tell, is a huge win! I'm making this again!
