Ingredients

  • 12 paper cupcake liners
  • 1 package Nana's Apple Cake Mix®
  • 2 cups grated carrots
  • 1 (8 ounce) can crushed pineapple in natural juices, well drained
  • 2 large eggs
  • 1 (16 ounce) container cream cheese frosting
  • Orange and green writing gel

Directions

  1. Preheat oven to 375°F. Line 1 (12-count) muffin pan with paper liners.
  2. In large bowl, combine Nana's Apple Cake Mix, carrots, pineapple and eggs; mix until combined. Divide among muffin pan. Bake until toothpick inserted in center comes out clean, about 25 minutes. Cool completely.
  3. Frost cooled cupcakes with frosting. Using orange writing gel, create a carrot on each cupcake by using a zig-zag motion to form the shape of a triangle. Using green writing gel, create the carrot tops.
  • Makes 12 cupcakes.

    Too Cute!

    The Cute design caught my eye, but just the mention of Nanas Apple Cake had me hooked! This recipe sounds sooooo good wish I had a box of the cake mix now... :( Just had to order 2 boxes - Mmmmmmmmmmmmmm Thanks for sharing!
