Ingredients
- 12 paper cupcake liners
- 1 package Nana's Apple Cake Mix®
- 2 cups grated carrots
- 1 (8 ounce) can crushed pineapple in natural juices, well drained
- 2 large eggs
- 1 (16 ounce) container cream cheese frosting
- Orange and green writing gel
Directions
- Preheat oven to 375°F. Line 1 (12-count) muffin pan with paper liners.
- In large bowl, combine Nana's Apple Cake Mix, carrots, pineapple and eggs; mix until combined. Divide among muffin pan. Bake until toothpick inserted in center comes out clean, about 25 minutes. Cool completely.
- Frost cooled cupcakes with frosting. Using orange writing gel, create a carrot on each cupcake by using a zig-zag motion to form the shape of a triangle. Using green writing gel, create the carrot tops.
- Makes 12 cupcakes.
