I haven't made beer cheese soup in a long time, even though it is a family favorite because the recipe I use takes a lot of prep. I did use about 1/3 lb. of "real" bacon" instead of the bacon bacon, cooked with some finely chopped carrots and onion which I added. Thanks for an easy twist on an old favorite.

Excellent, full of flavor
I'm not one for soups, but this one was delicious. Thick, creamy and full of flavor. I used Mexican cheese to add a kick to the flavor. My family loved it!! Served it with pretzel bread.

Delicious Rich Soup
Tried this today and absolutely love it! Didn't have beer in the fridge so I substituted seltzer. The soup is wonderfully thick and rich...a real comfort food.
