  • Southwest Beefy Mac Cheese

Ingredients

  • 7 ounces elbow macaroni
  • 1 pound 85% lean ground beef
  • 2 teaspoons Seasoned Salt
  • ¼ cup butter
  • ¼ cup all-purpose flour
  • 2½ cups milk
  • 2 tablespoons Simply Salsa™ Mix
  • 2 cups shredded taco cheese blend

Directions

  1. Prepare pasta according to package directions; drain. Meanwhile, in large skillet over medium-high heat, cook and crumble ground beef and Seasoned Salt until no longer pink, about 6-8 minutes; drain. Set aside.
  2. In large saucepan melt butter over medium heat. Whisk in flour; cook one minute whisking constantly. Gradually add in milk and Simply Salsa Mix; whisking constantly until smooth. Cook over medium heat, whisking constantly, until thickened and mixture comes to a boil.
  3. Blend in cheese; reduce heat to low and continue stirring until cheese is melted. Stir in pasta and ground beef. Cook until heated through, stirring frequently.

    Awesome! Kid friendly taco night!

    This recipe makes you wonder how anyone could eat that "creamy helper" out of a box. With only a few simple ingredients creamy mexi-mac was ready in a flash! I do recommend only 1T simply salsa.

    LOVE this twist on traditional Mac n Cheese

    Love this recipe. Easy and delicious. Comfort food at its best... a super crowd pleaser and even the picky eaters. A little spicy so you could cut back on simply salsa if you are serving to little ones.

    Mac and cheese, family approved!

    An easy and quick recipe to throw together. I only used 1 Tbsp. of Simply Salsa to keep it from being too spicy. I used sharp cheddar cheese. Will def make again!
