We loved this recipe! My kids actually ate it because it has just enough flavor but it wasn’t overpowering. We used the leftovers cold as a summer side dish and it was great.

easy tasty dinner
I'm making this dish for the 3rd time tonight...so clearly my husband and I like it. It's an easy freezer meal and can easily be made vegetarian/vegan. We feel that the dish could use a little extra flavor (admittedly, I make it without the garlic garlic), so we season it with extra Wahoo Chili or Chipotle Seasoning after it's cooked.
