Ingredients
- 2 tablespoons Onion Onion™ Seasoning
- 2 tablespoons water
- 2 cups cooked and cooled quinoa
- 1 cup grape tomatoes, cut in half
- 1 cup frozen fire-roasted corn, thawed
- ½ cup chopped cucumber
- ½ cup crumbled feta cheese
- 1 ripe avocado, pitted, peeled and chopped
- 2 tablespoons extra virgin olive oil
- 1 Juice of 1 lime
Directions
- In large microwave-safe bowl, combine Onion Onion Seasoning and water. Microwave on HIGH 30 seconds; cool 5 minutes.
- Add remaining ingredients to bowl; toss to coat. Salt and pepper as desired.
- Makes 6 servings.
