Ingredients

  • 2 tablespoons Onion Onion™ Seasoning
  • 2 tablespoons water
  • 2 cups cooked and cooled quinoa
  • 1 cup grape tomatoes, cut in half
  • 1 cup frozen fire-roasted corn, thawed
  • ½ cup chopped cucumber
  • ½ cup crumbled feta cheese
  • 1 ripe avocado, pitted, peeled and chopped
  • 2 tablespoons extra virgin olive oil
  • 1 Juice of 1 lime

Directions

  1. In large microwave-safe bowl, combine Onion Onion Seasoning and water. Microwave on HIGH 30 seconds; cool 5 minutes.
  2. Add remaining ingredients to bowl; toss to coat. Salt and pepper as desired.
  • Makes 6 servings.
