Ingredients

  • 12 ounces frozen tater tots
  • ½ pound 85% lean ground beef
  • ⅓ cup water
  • 1 tablespoon Mom's Favorite Taco Seasoning
  • 1 cup shredded mild Cheddar cheese, divided
  • Taco toppings such as, shredded lettuce, diced tomatoes, crushed nacho tortilla chips, optional

Directions

  1. Preheat oven to 425°F. Spray an 8-inch round baking pan with no-stick cooking spray. Arrange the tater tots in a single layer in the bottom of the pan. Carefully place in oven and bake 15 minutes.
  2. Meanwhile, in a medium skillet over medium-high heat, cook and crumble ground beef until no longer pink, about 6-8 minutes, drain. Stir in water and Mom’s Favorite Taco Seasoning. Simmer, stirring occasionally, until thickened.
  3. Carefully remove pan from oven and flatten tater tots with a spatula, pressing up sides to create a crust. Top with taco meat and ½ cup cheese. Carefully return to oven and bake 10 minutes.
  4. Carefully remove from oven and top with your favorite taco toppings and remaining ½ cup cheese.
  • Makes 4 servings.

    Kid Friendly & Very Economical

    Family loved this and was super inexpensive. I did make 1 lb of taco meat and saved 1/2 lb for another meal. Made this is a 9" pie plate, so many a few more tater tots- I buy in the biggest bag, so I didn't really measure. SInce family has different likes for toppings, I set up a topping "bar" and each person made their own. Warmed up the next day as a great leftover meal. Served with garlic green beans as a side dish.
